This is the type of coffee that you’ll think about hours after the last sip and start to crave all over again. It’s versatile, tasting great brewed hot or as a flash brewed coffee over ice. This year’s Mexico Chiapas is a certified organic and fair-trade coffee from the Agropecuaria de Los Altos de Chiapas Co-op, which has 1,320 members from 61 villages and 13 municipalities throughout the state of Chiapas. Why we’re excited: The ground aroma was faint, but as soon as we added water to the cupping bowl things started to liven up. Brown sugar, honey, and chocolate rushed our senses. We all instantly stopped and tried to keep our expressions neutral so as to not influence each other. Once we all were finished cupping and taking notes there was a noticeable sigh that can only be described as relief. The notes in the cup reminded us of apple, stone fruit, milk chocolate, and honey. Its acidity and sweetness were both balanced yet refined, which in part makes this Mexico Chiapas a good recommendation for all types of coffee drinkers.
